On Solaris I have DTrace and Sun Studio. Which Data Provider should I choose?

You can use any. The difference is if you will choose SunStudio you will be able to navigate from the details view to the line the function was called in meanwhile when DTrace is selected you will navigate to the function definition.

In NetBeans 6.8 there are two additional profiling tools available with DTrace but not available with SunStudio: I/O Usage and Thread Microstates. If you want to use those tools, select C/C++ DTrace Extended as your Profile Configuration in project properties -> Profile.
